5 lbs potatoes, finely grated3 medium onions, finely grated1 lb bacon, cut and fried, all fat reserved 6 eggs salt pepper sour cream (optional)Directions:1 Preheat oven to 350ºF.2 Peel potatoes and onions.3 In a large mixing bowl, hand grate potatoes and onions using the smallest grate holes.4 Texture should be "mushy" and moist. (NOTE: A food processor set on the smallest setting can be used for this step, but the texture will not be as mushy.).5 Cut bacon into small pieces and fry in a medium skillet until crisp.6 Pour bacon (including grease) into potato mixture.7 In a small mixing bowl, beat eggs with a fork.8 Pour eggs into potato mixture.9 Butter (or spray with Pam) 2 meatloaf pans.10 Divide potato mixture evenly between the 2 pans.11 Bake for 2 hours.12 Slice as you would a meatloaf and serve topped with sour cream (if desired)..ob_empty
